Ingredients
- 2 Eggs
- 1/4 cup Coconut oil
- 3/4 cup Monk fruit (you can use 1/2 cup if your bananas are really ripe, or if you don't like your cake too sweet)
- a teaspoon of cinnamon
- 2 medium ripe bananas
- 1 cup almond flour
- 1 tablespoon baking powder
Directions
- Preheat oven to 330 °F
- Mix in a blender: eggs, coconut oil, cinnamon, and monk fruit
- Add the bananas and blend well
- Add almond flour and the baking powder and blend.
- Pour batter into a Silicone Bundt greased with coconut oil.
- Bake for 45 minutes or until the centers are set and springy.
This recipe fits perfectly a 7.5-inch silicone Bundt. If you want to make a bigger cake, just double the recipe.
