Brazilian Carrot Cake - Guilt-Free Version

This creamy and guilt-free carrot cake is an adaptation of a traditional Brazilian recipe, but both sugar and white-flour free! The good part is that It is delicious and nutritious, with few ingredients and minimal effort. 

Enjoy it as a healthy snack or as an after-meal treat! 

Ingredients

  • 3 Eggs
  • 1/2 cup Coconut oil (melted but not hot)
  • 1 1/2 cup Monk fruit
  • pinch of cinnamon
  • 1 1/2 cup baby carrots
  • 2 cups almond flour
  • 1 tablespoon baking powder

Directions

  • Preheat oven to 340°F
  • Mix in a blender for 3 min.: eggs, coconut oil, cinnamon, and monk fruit. 
  • Add the carrots and blend well.
  • Add 1 cup of almond flour and the baking powder and blend.
  • Add the last cup of almond flour and blend a bit more.
  • Pour batter into a greased cake pan with coconut oil.

    Bake for 30-40 minutes until the centers are set and springy.

    Devour and enjoy.
