Chocolate Banana Split


Ingredients


Chia Seed Pudding Layer

  • 1-3/4 cup coconut milk
  • 2 servings chocolate protein powder
  • 1 medium/large ripe banana
  • 1/4 cup chia seeds

Yogurt Layer

  • 1/2 cup yogurt or kefir of choice

Granola Topping

  • 1/4 cup chopped macadamias
  • 1/4 cup chopped cashews
  • 1/4 cup sunflower seeds
  • 2 teaspoons 100% pure maple syrup

Chocolate Sauce

  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/4 cup cacao powder

Directions


Chia Seed Pudding Layer

  1. Combine coconut milk, protein powder, and banana in a blender until well combined.
  2. Place chia seeds in a jar, add the liquid from blender, and mix well with a fork.
  3. Refrigerate for at least 4 hours or overnight. NOTE: Stir occasionally in the first couple of hours as mixture thickens.

Granola Topping

  1. Preheat oven to 325°F. Mix all granola ingredients in a bowl.
  2. Place on lined baking tray and roast for 5–10 minutes or until golden. Keep an eye on this as it can burn quickly.
  3. Allow cooling. Store in an airtight container in the fridge until required.

Chocolate Sauce (make when ready to serve)

  1. Combine melted, slightly warm coconut oil and maple syrup. Whisk in the cacao powder until well combined.
  2. Set aside.
    Putting It All Together
  3. Divide previously prepared chia pudding into four glasses or jars.
  4. Top with yogurt layer and sprinkle with previously prepared granola topping.
  5. Drizzle chocolate sauce over the top.
  6. Enjoy immediately or store in the fridge for the next day.
