Banana Coconut Chia Pudding


Ingredients


  • 1 medium banana
  • 1 cup unsweetened coconut milk
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon vanilla protein powder
  • Sprinkle ground cinnamon
  • 1/4 cup chia seeds
  • Coconut flakes, sunflower seeds, and hemp seeds to top

Directions


  1. Place banana, coconut milk, vanilla extract, protein powder, and cinnamon in blender and blitz until combined.
  2. Pour mixture into a bowl and add chia seeds. Mix well and place in the fridge overnight.
  3. Top with coconut flakes, sunflower seeds, and hemp seeds before digging in.
